Day 76: March 17, 2011

Today I am thankful for goat cheese. Last night I had it with my beets, tonight sprinkled on salad with apples. I just can't get enough of it. Delish! I'm also thankful for the mercy of everyone I encountered today that did not pinch me even though I totally forgot to wear green! I must have the luck of the Irish!

    goat cheese with beets is awesome! we make a beet salad with goat cheese that is one of my fave dinners. :)
